LAGUNITAS SMOKED

Petaluma TapRoom Chef Supreme Katie shared her super-secret Smoked JUMBO Wing recipe with us so you can create them at home on the smoker (or in the oven…or on the grill…however you wanna wing it). This recipe would be ideal for Game Day grubbin’, ‘cus big games call for even bigger snacks. Go Team!!

Dry Rub Shtuff:

  • ½ cup smoked paprika
  • ¾ cup paprika
  • ½ cup salt
  • 1/3 cup garlic powder
  • 1/3 cup onion powder
  • ¼ cup black pepper
  • 2 Tbsp chipotle powder
  • 2 Tbsp ground cumin
  • 1 Tbsp cayenne

Wing Sauce Shtuff:

  • 3.5 cup ketchup
  • ¾ cup Lagunitas IPA
  • 2 Tbsp onion powder
  • 2 Tbsp garlic powder
  • 1 Tbsp paprika
  • ½ tsp cayenne powder
  • ½ tsp yellow mustard powder
  • ½ tsp black pepper
  • ½ tsp dark chili powder
  • 1/3 cup packed brown sugar
  • 1 1/3 cup apple cider vinegar
  • 2 ¾ cup molasses
  • ½ cup sriracha
  • ½ can chipotle in adobo
  • ½ cup diced yellow onion
  • 1 Tbsp red wine vinegar
  • 4 cloves garlic, minced

Most Important Ingredient:

5 LBS jumbo 3-joint chicken wings

  1. Gather up all your ingredients.
  2. Mix up all your dry rub shtuff.
  3. Rub the wings down good with a light coating of the dry rub. Be thorough with it. (Not like that one time you did such a “thorough” job with the sunscreen your buddy wound up with a couple of handprints on their back).
  4. Place wings into the smoker set to 325 degrees Fahrenheit, and smoke for 45-60 min. You’ll know they’re good and ready when they’re golden brown and delicious (and the internal temp reaches 165 degrees #foodsafety).
  5. While the wings are smokin’, get a medium-sized mixing bowl (or small cauldron) and mix up the wing sauce shtuff (chanting incantations over it to give it a little extra sumpin’, highly encouraged).
  6. Absolutely bathe the smokin’ hot wings in the wing sauce (careful not to singe yourself). Be sure to really get the sauce into all those nooks and crannies.
  7. Serve with your favorite dippin’ sauces (team blue cheese > team ranch; fight us). Dunk vigorously and liberally.
  8. Pair with any Lagunitas IPA you’re into. There’s no wrong answer here.
